Vegetable tempura and somen noodles topped with simmered vegetables.
Found some delicious looking vegetables (green eggplant, sweet pepper, okra, and hanabiratake mushrooms) at the farmers' market near my house.
Enjoyed them in tempura!! Then, the rest was deep-fried and simmered with dashi, Japanese soup stock. The simmered vegetables are refrigerated and served with cold
somen noodles. The cold, smooth somen noodles go perfectly with the rich deep fried/simmered vegetables!! Perfect for this season!
